It’s Mother’s Day–do you know what you’re cooking? Whether Mom likes breakfast in bed or prefers a fancy dinner, you can treat her to exactly what she wants on her special day with a completely plant-based menu.


Make the most important meal of the day the most delicious with these unique ideas!

Lemon Blueberry Oatmeal Pancakes from Keepin’ It Kind — Made with oat flour and chickpea flour, these completely gluten-free pancakes are bursting with blueberries and just a hint of lemon for a light spring flavor that Mom will love.
Raw Apple Crisp from Whole Foods  — If Mom is more of an apple lover, try this quick, healthy fruit crisp that requires no cooking. Mom will never know that you threw it together last-minute!
Strawberry Cream Cheese French Toast on LA Weekly — This decadent recipe from Spork-Fed by Jenny Engel and Heather Goldberg is like having dessert for breakfast. Bread stuffed with vegan cream cheese and fresh strawberries, coated with spiced batter and toasted to perfection on both sides? Sheer breakfast bliss.

A hearty late morning or midday meal makes Mother’s Day shine, especially if you go for something a little unusual.

Dal Chilla with Blackened Veggies and Havarti Cream from The Vegan Richa — There are several steps involved in this amazing “omelet,” but the results are well worth it. With an “egg” made from legumes and a Creole-style filling featuring okra and tempeh, this is one brunch that Mom won’t forget.
Creamy Dill Sweet Potato Salad from Vegan Mother Hubbard — Sweet potatoes, peas and diced cucumbers take this standard side dish to a whole new level. Serve it as a companion to Mom’s favorite sandwich or vegan burger–or just let her eat it out of the bowl.
Breakfast Burrito Bake from Straight Up Food — This multi-layered “burrito” in a dish has no oil, no faux meat and no cheese substitutes, but it’s packed with flavor in the form of beans and seasonal veggies. Mashed potatoes give it a “comfort food” twist that will make Mom’s day.
