2015 Valentine’s Day Recipe Roundup — Sweet Vegan Meals & Treats to Share!

I’ll admit it: I’m not a big fan of Valentine’s Day.

It’s not that I dislike the sentiment–I firmly believe that love should be at the root of all actions (“This is my commandment, That ye love one another, as I have loved you.” – John 15:12).  It’s the consumerism that gets me, the “if you don’t buy your sweetheart diamonds and cars and trips to the Bahamas, you don’t love them enough!!” message that gets plastered everywhere this time of year.

And, of course, the massive amounts of artificially colored, fake flavored candy that parents let their kids binge on, but that’s another subject altogether.

Back to the love thing.  I’m the first person to think of food when it comes to showing someone how much they’re appreciated.  While equating food with love isn’t necessarily the smartest idea (more on that at the end of the month), it isn’t always a bad thing, either.  Which is why I’ve put together some of the most delicious-looking vegan Valentine’s Day recipes from around the Intarwebs.  Here you’ll find warming main dishes to stave off the lingering chill (Snowmageddon #3, anyone?) and tasty desserts to share with the one you love.

For dinner:

A cold Valentine’s Day calls for comfort food, and these recipes fit the bill!

Get Your “Glow” Butternut Squash Lentil Curry from Dishing Up the Dirt — A hearty combination of sweet butternut squash, earthy lentils and curry spices, this warming winter meal makes the perfect start to an evening in with your sweetheart.

Mushroom Stout Pie with Potato Biscuits from The Post Punk Kitchen — Leave it to Isa Chandra Moskowitz to combine stout beer, kidney beans and mashed potatoes with herbs and veggies to create a unique twist on the classic dinner pie.  A bit involved, but worth it if you’re feeling adventurous.

Potato Leek Soup w/ Coconut Milk — A QV reader favorite, this warming soup blends leeks, potatoes and coconut milk for a satisfying soup that makes a lovely start to your Valentine’s Day meal.

Vegan Pasta Primavera — Noodles (the ultimate comfort food!) smothered in creamy sauce and topped with a variety of colorful veggies–you might have a hard time sharing this one!

For Dessert:

Cap off your meal with one of these tasty treats, make them as a gift for the one you love or hoard them all for yourself.  Because, you know.  Chocolate.

Peanut Butter Balls from Oh She Glows — Remember buckeyes?  Try this healthier (but just as delicious) makeover that uses maple syrup and coconut flour instead of powdered sugar and butter to re-create the classic chocolate-peanut-butter truffle.  Added bonus: a bit of crunch from crispy rice cereal!

Black Bean Lava Cakes from the Healthy Maven — Featured on the Ricki Heller blog, this delectable recipe has a secret ingredient: black beans!  These grain-free, gluten-free cakes are baked in individual ramekins and literally oozing chocolate.

Peanut Butter Pie — Another chocolate-peanut-butter combination, this time from the annuls of QV history.  This pie makes no apologies–it’s thick, rich and completely not good for you.  Enjoy it with your sweetheart as a special treat.
