I love mangos and usually eat a whole one at once. However, since I’ve been trying to come up with more raw snack ideas, I decided to do something a little different with the last one I bought. Instead of hunkering down with the vegetable peeler and a napkin, I cut up a few chunks and threw them in a bowl along with pineapple and some sliced strawberries.
And guess what? It was pretty much the most awesome thing ever. Especially with raw walnuts on top.
I almost feel like I’m cheating by posting this as a recipe, but it was so good that I had to share. You can use pretty much any fruit. I’d like to try adding some slices of kiwi, but chunks of melon or banana would work well, too.
- ¼-1/3 of a large mango
- 2 rings fresh pineapple, cut into chunks
- 3 strawberries
- walnuts, for garnish
- Cut the pineapple and mango into bite-sized chunks and slice the strawberries.
- Place everything except walnuts in a bowl in any way you feel is most artistic.
- Break walnuts into pieces and sprinkle on top.
- Grab a spoon and enjoy!
